Frozen burger cooking times
Frozen patties cook fine straight from the freezer — they just take roughly half again as long, and they will not take a sear until the surface thaws.
Times from frozen
| Method | Frozen patty (4 oz, ~½ in) | vs thawed |
|---|---|---|
| Grill, direct, lid down | ~5–6 min per side | ~2 min longer per side |
| Skillet / flat-top, medium-high | ~5–7 min per side | ~2–3 min longer |
| Oven 375°F | ~25–30 min, flip once | ~8–10 min longer |
Thicker frozen patties (¾–1 inch) scale up accordingly and do better with lower heat and a lid — the center needs time while the surface crusts. The doneness check is the same as fresh: an instant-read thermometer, 160°F for ground beef unless you know your source and grind.
The two rules
First: never counter-thaw. Frozen patties thaw in the refrigerator, or they cook from frozen — the kitchen counter is the option that is not on the menu. Second: salt after the surface thaws, not before — salt sitting on ice pulls moisture and then steams it off. Frozen patties seasoned mid-cook taste better than ones seasoned at the freezer door.
When frozen is the right call
Weeknight economics: pre-formed frozen patties are uniform, portioned, and keep for months, and the quality gap versus fresh-formed is mostly technique (see grill times for fresh). For a crowd, the calculator still does the arithmetic — work from the raw weight on the box, and burgers per pound covers the pack math.
